Healthy eating with Pam Lillis
Pam Lillis has always been an advocate of healthy eating. The Wilton mother of four says that despite packed schedules, she was never too busy to cook nutritious meals for her family. It only seemed natural that after graduating from the Institute for Integrative Nutrition in 2010 she started a business as a certified health coach.
Her two six-week-long programs, Navigating Nutrition 1 and 2, were quickly popular, but she soon realized that many of her clients weren’t integrating what they learned into their everyday lives. “Nutrition is confusing,” Lillis explains, because working with new ingredients and recipes can sometimes be intimidating. To remedy the issue, she incorporated cooking classes into her program. “Hands-on experience is really valuable for enhancing education,” Lillis says. Her stunning, light-flooded kitchen is the perfect setting in which to learn simple, healthy recipes.
Homemade granola bars with coconut, flax and cherries; grain salads, and poached salmon are just a few of the delicious foods clients learn to prepare. “Everything is always seasonal and organic,” says Lillis. Outside of the Navigating Nutrition programs, Lillis also teaches other classes through Wilton Continuing Education.
“My goal is to give each student the confidence to go home and do it themselves,” says Lillis. “I love showing my clients how really easy it is to cook.”
