Babaloo Cocina is a Latin-inspired eatery
Babaloo Cocina is the newest Latin-inspired eatery hoping to “bring a little cha-cha” to Wilton. This rebranding of Bistro 7 by owner Matt Criscuolo is a welcome addition to the regional food scene. “Matt always wanted to explore this concept,” says Manager Chris Caldarariu. “He owns three pizzerias, so he thought Latin food would be a nice change and work for this location.”
The totally redesigned menu is described as “Latin American soul food,” drawing from the cuisines of Cuba, South America, Puerto Rico, and the Dominican Republic. Popular entrees include Matt’s Paella, loaded with seafood, chicken, and Spanish sausage; and the shredded Cuban-style brisket, Ropa Vieja. If you’re in the mood for tapas, try the chorizo with sweet and sour figs, the flaky beef empanadas, or the pork belly tacos.
The signature drinks are enticing, and both fan favorites are rimmed with chili salt. The Mezcal Mule is a riff on a Moscow Mule, substituting Mezcal (a cousin to Tequila) for the traditional vodka and finished with fresh lime juice; and Gonzalo e Gonzalo incorporates two vodkas, Smirnoff Watermelon and Ruby Red Organic, with Sauza Silver Tequila.
