Local Cheese Guru Comes to Fairfield Shop
Fromage, Käse. Queso. Formaggio. Cheese. Whatever you call it, it’s hard not to love it. (Unless, of course, you’re lactose intolerant; in which case, you may want to read a different article on this site.)
If you’re Jason Sobocinski, cheese is all you think about. As a restaurant owner, TV personality on The Cooking Channel, and a recent cookbook author, he is the “The Big Cheese” of New Haven with his own gastropub and cheese shop, Caseus Fromagerie Bistro.
"It has a story and I love telling a story," Sobocinski was quoted as saying in a November 2nd article in The Day. "I just love cheese-tasting it, thinking about it, talking about it, sharing it. Eating alone is sacrilege.
On Saturday, March 3rd, he will be stopping by the Fairfield Cheese Company from 1:00 p.m. to 3:00 p.m. for a signing of his latest cookbook, Caseus Fromagerie Bistro Cookbook, and a sampling of his macaroni and cheese. Yum!
With a gastronomy degree under his belt and an early culinary career at Formaggio Kitchen in Cambridge, Mass., he opened his shop in New Haven to rave reviews. He believes in entertaining with cheese and his cookbook published late last year shows that.
Sobocincki gives a history of cheese along with mouth-watering recipes for cooking with it. For the die-hard enthusiast, there is plenty of advice on how to prepare cheese, explanations of gourmet jargon, and where to find unique ingredients as well as suggestions for substitutions in recipes.
And for those that appreciate supporting local businesses, Sobocinski gets some of the cheeses he sells right here in Connecticut including Cato Corner Farm in Colchester, Beltane Farm in Lebanon, and Sankow’s Beaver Brook Farm in Lyme.
So drop by the Fairfield Cheese Company located at 2090 Post Road next to Harry’s Wine & Liquor Market. You may learn more about cheese than you ever thought you wanted to.
