All things maple syrup
Besides the return of warmth and the smell of earth to the region, early spring (or late winter, depending on fickle winds of New England climes) also brings sap. Maple syrup is a culinary currency here, and its season, like a night-blooming desert flower, is short-lived. But when it’s running, there’s nothing else like it.
Sugar shacks dot our hill towns and are friendly to visitors (Holiday Brook Farm in Dalton, Sweet Brook Farm in Williamstown, Windsor Hill Sugar House in Windsor, and Minery Sugar Shack in Otis, to name a handful). Ioka Valley Farm in Hancock is where many make the pilgrimage to watch the brew boil, wander the farm, fill their gullets with fluffy pancakes, and take a nip of Grade A for the road.
In addition to the sugar houses, Berkshire Grown will put on its annual benefit, March Maple Dinner, on March 21, 2016 at the Cranwell Resort. The table will be literally covered in gold.
