Fire Roasted Catering has a unique take on food and presentation
As far as flame goes, the hotter the better, according to Jeremy Stanton, owner/founder of 11-year-old Fire Roasted Catering. (Stanton is also the owner of the Meat Market in Great Barrington.)
FRC is comprised of a rugged crew of chefs who bring seasonal and local foods to a range of sites across the Northeast. While some locations can be challenging—site prep can take anywhere from 15 minutes to 15 hours—Stanton’s creative spark takes charge, thanks to his immediate surroundings.
“I get inspired by the history of the land and the ingredients that are available there,” he says. “Ultimately, fire marked the beginning of civilization.”
FRC has brought its brilliant charcuterie and salt-of-the-earth fare to the likes of Martha Stewart and Uma Thurman. Whether he’s catering for a famous hotelier or a just-married couple, Stanton’s favorite moment is to “watch people walk up to the fire.”
